I love crockpot meals, but crockpot summer meals hold a special place in my heart!
There’s nothing better than coming home from a summer adventure at the lake, water park, or out with friends to find dinner almost ready for you!
It also doesn’t heat up your home like it does when you turn on the oven or stove!
Summer is probably NOT the time when you’re looking for a thick stew or chili, so these summer crockpot recipes are perfect for the hot summer months when you want your food to match the season AND you want it to be mostly hands-off!

The simplest Crockpot French Dip Sandwiches
This is basically Bart’s favorite meal on earth. My girls love it too, and so they can’t really understand what’s going on when we eat sandwiches without sauce. And so damn easy. Add a seasonal fruit and a side salad and you’re good to go!


Crispy carnitas with summer corn salsa
This is screaming summer! Fresh corn salsa, paired with crispy pork and jalapeno crema, all wrapped in a warm tortilla. My work here is done.


Slow cooked sandwiches with chopped meat and chili peppers
If I had to pick a favorite dinner, it might be these sandwiches. Oh man, I never get tired of them – they are so good. If we have leftover meat, I scramble it with eggs for breakfast or put it in a tortilla shell.


Crockpot Honey Garlic Chicken
This is a crowd pleaser and it’s so easy! I love that the recipe calls for chicken thighs, which tend to be cheaper and moister than chicken breasts. Serve with a side of broccoli and rice to complete a complete meal.


Crockpot Philly Cheesesteaks
Philly Cheesesteaks are a classic sandwich that you really can’t go wrong with. Place all the ingredients in the pot and let them cook all day. When you’re ready to eat, tuck the meat into a hoagie roll, top with provolone, wrap it in foil, and place it in the oven for a few minutes. This is a great meal if everyone eats at different times during the evening.


Green chile nachos
If you have guests over, this is a perfect way to feed a lot of mouths, without spending the day in the kitchen. Add some delicious toppings like avocado, olives and tomatoes to make it even more delicious.

I first made this Thai Beef Crockpot Curry recipe over ten years ago and it is so good. It’s really hard to go wrong and always tastes delicious! And I can never say no to curry, not even in summer.

You can make this recipe super simple or a little more complicated, whether you want to buy Kung Pao sauce or make it from scratch. Either way, it’s delicious and packed with nutrients!

My sister Merrick always makes this for a dinner at our family reunion and it’s always a big hit. I love that you can turn it into a burrito or salad and that it can slow cook all day while we’re out entertaining! The simplest dinner!

This is the simplest meal on the planet. Frozen meatballs, jarred marinara (Rao’s is 100% the best), and two minutes of prep time… yes, please! I follow this recipe loosely because sometimes I skip adding the spices if I have this garlic spread to put on sandwiches and put in the oven to toast.


Creamy Coconut Chicken Tikka Masala
My husband and I love Indian food and my kids love naan bread! This is easy to divide into kid-friendly sections (rice, naan, chicken), but serving it regularly is absolutely divine too! Try it if you are looking for something that tastes like takeaway food from home!

I could eat anything with dried tomatoes in it! This chicken in creamy sauce has all the best flavors and I love that it has spinach! We love this dish served over noodles, but it would also be great with rice, cauliflower rice, dumplings, or even just some crusty bread.

My husband usually likes to use his smoker to make pulled pork, but on some summer days it seems like a lot of work goes into getting everything ready, so this is our simple backup! We love using it for pulled pork sandwiches with slaw and make sheet pan tacos or BBQ pork pizza with the leftovers.
